Production of fresh egg pasta and gnocchi

Pappardelle with sausage and buffalo cottage cheese

Ingredients for 2 persons:

- 200g of pappardelle Barone

- 100g of buffalo cottage cheese

- 2 fresh sausages

- Extra virgin olive oil

- Salt and pepper


Remove the skin from the sausages and cut them into pieces. Heat up some oil in a saucepan and crush the sausages into pieces while frying them.


Towards the end, add the buffalo cottage cheese, salt and pepper to taste, mix well and then add the cooked Tagliatelle as well as some of the water in which they were cooked. Thus, the flavours will mix well. Serve.
