Here is our alternative to “gnocchi” and our medium “gnocchi”, the “tronchetto”. This type of dumpling, or gnocco, is characterized by its smaller size compared to the classic gnocco, and in a certain aspect it obtains a more elegant presence. The composition is always the classic one of potato flour and water, in a cold prepared dough. Then follows a quick cooking by immersing the tronchetti gnocchi when the water boils and removing them as soon as they emerge, ready to be served.
